Coco pandesal ilulunsad ng DOST-FNRI, PhilBaking

MANILA, Philippines – Ilulunsad ng Department of Science and Technology- Food and Nutrition Research Institute (DOST-FNRI) ang “coco pandesal” sa Hunyo na isang wheat alternatives.

Ayon kay DOST Secretary Fortunato de la Peña, nagsagawa ang FNRI ng nutrient analysis para sa coco pandesal, na ifo-formulate ng Philippine Baking Industry Group (PhilBaking).

Sabi ng kalihim, pangungunahan ng PhilBaking ang paglikha ng coco pandesal gamit ang wheat flour at coconut flour.

“The DOST is concerned with the rising price of wheat flour due to geopolitical circumstances. Together with various agencies such as the DA (Department of Agriculture), DTI (Department of Trade and Industry), PCA (Philippine Coconut Authority), VCO Philippines, at PhiliBaking, the DOST convened several meetings to figure out which among the local flours can be used as an alternative to wheat flour,” saad nito.

Kabilang sa mga ikinokonsidera bilang alternatibo sa wheat flour ay ang cassava, sweet potato, at coconut flour.

Matatandaang ipinakilala kamakailan ng FNRI ang sweet potato enhanced nutribun (e-nutribun) nito gamit ang sweet potato biblang pangunahing sangkap.

Ito ay mapagkukunan ng potassium, zinc, protein, energy, at natural fiber, ayon kay FNRI Director Imelda Agdeppa.

Gayundin ang e-nutribun na mayroong carrots na layon tugunan ang limitadong suplay at mataas na presyo ng kalabasa in-between harvest season.

Ayon kay Agdeppa, ang carrot ay kagaya rin ng kalabasa at ibang colored vegetables na mayroong beta-carotene.

Ilan pa sa mga potensyal na pamalit sa wheat flour ay sweet potato, cassava, banana at arrowroot flour. RNT/ JCM
